Mix everything together until well combined. Be careful not to overmix, as this can make the meatloaf tough.
3. Form the Mini Meatloafs:
Divide the meat mixture evenly into the muffin tin, filling each cup to about 3/4 full. Gently press the mixture into the cups to form small meatloafs.
4. Make the Topping:
In a small bowl, mix together the ketchup, brown sugar, and mustard (if using).
Spoon a small amount of this mixture on top of each mini meatloaf.
5. Bake:
Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the meatloafs are cooked through and reach an internal temperature of 160°F (71°C).
If you like your meatloafs with a crispier topping, you can broil them for an additional 2-3 minutes at the end.
6. Serve:
Remove the mini meatloafs from the oven and let them rest for a few minutes before serving.
Serve with mashed potatoes, roasted vegetables, or a simple salad for a complete meal.
