Instructions:
- Cook the penne pasta according to package instructions. Drain and set aside.
- Season shrimp with salt and black pepper. In a large skillet, heat olive oil over medium-high heat and cook shrimp until pink and opaque. Remove from the skillet and set aside.
- In the same skillet, sauté minced garlic and red pepper flakes (if using) until fragrant.
- Add chopped spinach and cherry tomatoes to the skillet, cooking until spinach wilts and tomatoes soften.
- Return the cooked shrimp to the skillet and stir in the cooked penne pasta.
- Pour in the heavy cream, mozzarella, and Parmesan cheeses, stirring until the cheeses melt and form a creamy sauce.
- Season with additional salt and pepper to taste. Simmer for a few minutes until the sauce thickens.
- Garnish with fresh basil leaves and serve the Cheese Shrimp Penne Pasta & Spinach hot. 🌿🍤🍝
