Method of Preparation:

  1. Begin by preparing the sauce. Place a pot of water on the stove and bring it to a boil. Score a small “X” on the bottom of each tomato with a knife. Once the water is boiling, add the tomatoes to the pot.
  2. After about 5 minutes, remove the tomatoes from the boiling water and place them in a bowl of cold water. This will make it easier to peel off their skins. Once cooled, peel the tomatoes and place them in a blender to make a smooth tomato sauce.
  3. In a frying pan, heat the olive oil over low heat. Peel and finely chop the onions, or grate them for a smoother sauce. Also, peel and chop the garlic cloves. Add them to the frying pan and cook until soft.
  4. Once the onions and garlic are soft, add the blended tomatoes to the frying pan. Season the sauce with salt and pepper to taste. Allow the sauce to simmer over low heat for about 20 minutes, until it thickens and develops flavor.
  5. While the sauce is cooking, prepare the spaghetti according to the package instructions. Cook the spaghetti in a pot of boiling salted water until al dente, usually around 7 minutes. Drain the cooked spaghetti.
  6. Once the spaghetti is cooked and drained, serve it onto plates. Top the spaghetti with the Neapolitan sauce and pieces of mozzarella cheese. Optionally, garnish with fresh basil leaves and grated Parmesan cheese.
