Japchae (Korean Stir-Fried Glass Noodles). Eat Korean once… and you’re hooked

Ingredients:

Noodles & Beef
8 oz Korean sweet potato glass noodles (dangmyeon)
8 oz beef ribeye or sirloin, thinly sliced
1 tbsp soy sauce (for beef)
1 tsp sugar (for beef)
1 tsp sesame oil (for beef)

Vegetables
1 cup spinach (or baby spinach)
1 carrot, cut into thin matchsticks
1 small onion, thinly sliced
1 red bell pepper, thinly sliced
4–5 shiitake mushrooms, thinly sliced (or button mushrooms)
2–3 garlic cloves, minced
2 green onions, sliced
2 eggs, lightly beaten

Sauce
6 tbsp soy sauce
3 tbsp sugar
2 tbsp sesame oil
1 tbsp oyster sauce (optional, deeper flavor)
1–2 tsp sesame seeds
Black pepper to taste

Oil for cooking
