Prepare the Spice Mix:
In a bowl, combine all the spices listed for the spice mix. Mix them well to ensure even distribution.
Marinate the Chicken:
In another bowl, whisk together the buttermilk and egg.
Dip the chicken pieces in the buttermilk mixture, ensuring they are well-coated. Let them marinate for at least 20-30 minutes. For best results, marinate in the refrigerator for several hours or overnight.
Coat the Chicken:
In a large bowl or a resealable plastic bag, combine the flour and the prepared spice mix.
Dredge each piece of marinated chicken in the flour mixture, ensuring they are thoroughly coated. You can do this one piece at a time or a few pieces at a time if using a plastic bag.
Fry the Chicken:
Heat vegetable oil in a deep fryer or a large skillet to 350F 175C. There should be enough oil to submerge the chicken pieces.
Fry the chicken in batches, being careful not to overcrowd the pan. Fry until the chicken is golden brown and crispy, about 12-15 minutes for thighs and drumsticks, and 10-12 minutes for wings and breasts. The internal temperature should reach 165F 75C.
Drain and Serve:
Once fried, place the chicken on a wire rack or paper towels to drain excess oil.
Serve hot and enjoy your homemade KFC-style chicken!
