Step 1: Bake the Cake
Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, mixing well after each. Stir in key lime zest, juice, and vanilla.
Alternately mix in dry ingredients and buttermilk, starting and ending with dry ingredients.
Divide batter evenly between the cake pans and bake for 22–25 minutes, until a toothpick comes out clean.
Let cakes cool in pans for 10 minutes, then transfer to a wire rack.
Step 2: Make the Frosting
Beat cream cheese and butter until smooth.
Gradually add powdered sugar, then mix in key lime juice, zest, and vanilla.
Whip until light and fluffy.
Step 3: Assemble & Decorate
Place one cake layer on a stand and spread with frosting.
Repeat with remaining layers, frosting the sides and top.
Garnish with extra lime zest for a fresh touch.
