Salt the Cabbage:
In a bowl, mix the sliced cabbage with kosher salt. Let stand for 30 minutes. Afterward, squeeze out as much liquid as possible.
Cook the Noodles:
While the cabbage is sitting, boil the noodles according to the package directions. Drain and set aside.
Sauté the Onions:
In a deep skillet, heat butter, oil, or bacon fat. Add the sliced onions and cook until softened.
Add the Cabbage:
Add the drained cabbage to the skillet along with black pepper and sugar. Stir to combine.
Cook Until Caramelized:
Cook over low heat, stirring frequently, until the cabbage is browned and caramelized, about 25–30 minutes.
Combine with Noodles:
Add the cooked noodles to the skillet and toss well to blend thoroughly with the cabbage mixture.
Serve:
Serve warm, topped with sour cream (drained in cheesecloth for best texture).
Optional Additions
Add chopped bacon or garlic with the onions for extra flavor.
To turn this into a main dish, add sliced Kielbasa or cubed ham while frying the cabbage.
