Lamb Chops with Mint Chimichurri

1. Season lamb chops with salt and pepper. Heat 2 tbsp olive oil in a skillet over medium-high heat. Sear lamb chops 3-4 minutes per side for medium-rare, or until desired doneness. Remove and let rest.
2. In a food processor, combine mint, parsley, garlic, red wine vinegar, 1/2 cup olive oil, red pepper flakes, lemon zest, and lemon juice. Blend until smooth to make the chimichurri sauce.
3. Spoon mint chimichurri over lamb chops before serving.
4. Serve warm with your choice of sides.
