Ingredients:
- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar (for the crust)
- 4 tablespoons unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar (for the filling)
- 3 large eggs
- 1 cup white chocolate chips, melted and cooled
- Zest and juice of 2 lemons
- 1 teaspoon pure vanilla extract
Directions:
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
- Beat cream cheese and 1 cup sugar until creamy. Add eggs one at a time. Mix in white chocolate, lemon zest, lemon juice, and vanilla. Pour over crust.
- Bake for 50-60 minutes until the center is set but jiggles slightly. Cool for 10 minutes, then loosen edges with a knife. Cool completely before chilling for at least 4 hours, preferably overnight.
