Procedure:

Preparation of Ingredients:

  1. Peel the oranges and separate them into segments.
  2. Peel and finely grate the carrots.
  3. If desired, peel and finely chop the apple for additional sweetness.

Cooking Oranges and Carrots:

  1. In a large pot, combine the orange segments, grated carrots, and lemon juice.
  2. If using, add the chopped apple.
  3. Cook over medium heat for 20-25 minutes, stirring occasionally.

Adding Cinnamon (Optional):

  1. Use a potato masher or fork to lightly mash the orange and carrot mixture for a spreadable consistency.
  2. Optionally, add ground cinnamon for aromatic flavor.

Adjusting Consistency:

  1. If the jam is too thick, add water to achieve desired consistency.
  2. Continue cooking over medium-low heat for another 10-15 minutes, stirring frequently.

Cold Plate Test:

  1. Place a small saucer in the freezer for a few minutes.
  2. Pour a small amount of jam onto the cold plate. If it thickens and forms a film, it’s ready.

Storage:

  1. Pour the hot jam into sterilized jars.
  2. Seal the jars tightly and invert them to create a vacuum seal.
  3. Let cool completely before storing in the refrigerator.

This sugar-free orange and carrot marmalade is a delicious and healthy addition to breakfasts and snacks. The natural sweetness of oranges and carrots, complemented by apple and cinnamon, creates a flavorful jam without the need for added sugar.
