Procedure:
Preparation of Ingredients:
Peel the oranges and separate them into segments.
Peel and finely grate the carrots.
If desired, peel and finely chop the apple for additional sweetness.
Cooking Oranges and Carrots:
In a large pot, combine the orange segments, grated carrots, and lemon juice.
If using, add the chopped apple.
Cook over medium heat for 20-25 minutes, stirring occasionally.
Adding Cinnamon (Optional):
Use a potato masher or fork to lightly mash the orange and carrot mixture for a spreadable consistency.
Optionally, add ground cinnamon for aromatic flavor.
Adjusting Consistency:
If the jam is too thick, add water to achieve desired consistency.
Continue cooking over medium-low heat for another 10-15 minutes, stirring frequently.
Cold Plate Test:
Place a small saucer in the freezer for a few minutes.
Pour a small amount of jam onto the cold plate. If it thickens and forms a film, it’s ready.
Storage:
Pour the hot jam into sterilized jars.
Seal the jars tightly and invert them to create a vacuum seal.
Let cool completely before storing in the refrigerator.
Enjoy:
