For the Pastry:

  • 120 g (1/2 cup) Soft Butter
  • A Pinch of Salt
  • 80 g (1/3 cup + 1 tbsp) Sugar
  • Grated Zest of 1 Lemon
  • 2 Eggs
  • 380 g (3 cups + 1 tbsp) All-Purpose Flour
  • 10 g (2 tsp) Baking Powder

For the Lemon Cream Filling:

  • 500 ml (2 cups) Latte Macchiato (or Milk)
  • 2 Egg Yolks
  • 2 tbsp Cornstarch
  • 1 tbsp Flour
  • 20 g (1.5 tbsp) Butter
  • Juice of 1 Lemon
  • 80 g (1/3 cup + 1 tbsp) Sugar
