1. Prepare the Cake Batter:

  • Preheat your oven to 160Β°C (320Β°F).
  • In a large bowl, beat together the eggs, sugar, and a pinch of salt until pale and fluffy.
  • Add the zest of two lemons and the melted butter. Mix until well combined.
  • Sift together the flour and baking powder, then fold them into the egg mixture.
  • Stir in 2 tablespoons of milk until the batter is smooth.
  • Grease and flour a cake pan, then pour the batter into the prepared pan.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.

2. Prepare the Lemon Soak:

  • While the cake is baking, mix the lemon juice and powdered sugar until the sugar is fully dissolved.
  • When the cake is done, remove it from the oven and poke small holes all over the surface using a toothpick.
  • Pour the lemon soak over the warm cake, allowing it to soak in completely.
  • Cover the cake and let it cool completely before serving.
