Instructions:
1. Prepare the Cake Batter:
- Preheat your oven to 160°C (320°F).
- In a large bowl, beat together the eggs, sugar, and a pinch of salt until pale and fluffy.
- Add the zest of two lemons and the melted butter. Mix until well combined.
- Sift together the flour and baking powder, then fold them into the egg mixture.
- Stir in 2 tablespoons of milk until the batter is smooth.
- Grease and flour a cake pan, then pour the batter into the prepared pan.
- Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
2. Prepare the Lemon Soak:
- While the cake is baking, mix the lemon juice and powdered sugar until the sugar is fully dissolved.
- When the cake is done, remove it from the oven and poke small holes all over the surface using a toothpick.
- Pour the lemon soak over the warm cake, allowing it to soak in completely.
- Cover the cake and let it cool completely before serving.
