Instructions:

Cook Potatoes: Add chicken broth, potatoes, salt, pepper, and smoked paprika to the pot. Bring to a boil, then simmer until potatoes are tender.
Blend Soup: Partially blend the soup with an immersion blender, leaving some chunks.
Add Dairy and Cheese: Stir in heavy cream, cheddar cheese, and sour cream until combined and cheese is melted.
Serve: Ladle soup into bowls and top with desired toppings. Serve warm.
