Ingredients
½ cup (1 stick) unsalted butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
¼ teaspoon salt
1 cup milk
1 can (21 oz) lemon pie filling
Optional: powdered sugar and lemon zest for garnish
Instructions
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Melt the Butter:
Place the butter in a 9×9-inch baking dish and put it in the oven while it preheats. Allow the butter to melt completely. Remove once melted.
Mix the Batter:
In a medium bowl, whisk together the flour, sugar, baking powder, salt, and milk until smooth.
Layer the Ingredients (No Stirring!):
Pour the batter evenly over the melted butter in the baking dish — do not stir.
Spoon the lemon pie filling evenly on top of the batter — again, don’t stir. (The magic happens while baking!)
