Make-Ahead Crustless Breakfast Quiche

Ingredients (Makes 8 slices):

  • 1/2 cup (75g) finely chopped red bell pepper
  • 1/2 cup (50g) chopped green onions
  • 1/2 cup (75g) shredded sweet potato
  • 5 eggs
  • 1 cup (100g) shredded cheddar cheese (or your favorite melting cheese)
  • 1 cup (225g) cottage cheese
  • 1/2 cup (120ml) milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup (25g) ground oats or oat flour
  • 1 teaspoon mustard
