Ingredients:

4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 cup sliced mushrooms
1 cup frozen peas
1 cup frozen corn kernels
1 (10.5 oz) can cream of chicken soup
1 cup chicken broth
1 cup sour cream
1 cup shredded cheddar cheese
2 cups crushed butter crackers (such as Ritz)
1/4 cup melted butter

Instructions:

Preheat and Prep: Set your oven to 375Β°F (190Β°C). Grease a 9×13-inch baking dish.

Season Chicken: Season the chicken breasts with salt and pepper.

Brown Chicken: Heat olive oil in a skillet over medium-high. Cook chicken until golden on each side, approximately 4-5 minutes per side. Remove and set aside.
