Instructions
Preheat oven to 160-180°C (320-356°F).
Grease a cake tin.
In a large saucepan, combine water, sugar, dried fruit, butter, mixed spice, and bicarbonate of soda.
Bring to a boil, then simmer for 5 minutes, stirring occasionally.
Allow mixture to cool.
Gradually add beaten eggs and flour to the cooled mixture. Mix well until fully combined.
Pour batter into the greased cake tin.
Bake for about 1 hour or until a skewer inserted in the center comes out clean.
