Mediterranean Brioche Rolls

Ingredients

For the dough:

3½ cups (440g) all-purpose flour

2¼ tsp (1 packet) instant yeast

2 tbsp sugar

1 tsp salt

3 large eggs (room temperature)

½ cup (120ml) warm milk

3 tbsp olive oil

3 tbsp softened butter

1 tsp dried oregano

1 tsp dried thyme

¼ cup chopped sundried tomatoes (optional)

For finishing:

1 beaten egg (for glaze)

Poppy or sesame seeds for topping
