1. Make the Lemon Custard Filling
In a small saucepan, whisk together the egg, sugar, salt, and cornstarch until smooth.
Slowly add the milk, whisking constantly to prevent lumps.
Stir in the lemon zest and juice, then cook over medium-low heat, stirring constantly until the mixture thickens (about 5 minutes).
Remove from heat, stir in the butter, and mix until fully melted and smooth.
Cover with plastic wrap (touching the custard to prevent skin from forming) and set aside to cool.
2. Prepare the Cake Batter
In a mixing bowl, beat together eggs and sugar until light and fluffy.
Slowly add vegetable oil, milk, lemon zest, and lemon juice, mixing well.
Sift in the flour and baking powder, then gently fold to combine. (Don’t overmix – this keeps the cake soft!)
3. Assemble & Bake
Preheat oven to 350°F (175°C).
Grease a round 9-inch cake pan and pour in half the cake batter.
Spread the cooled lemon custard over the batter, then pour the remaining cake batter on top.
Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
4. Let It Cool & Dust with Sugar
Allow the cake to cool slightly before removing from the pan.
Dust with powdered sugar for an elegant finish.
Slice and serve while warm for the ultimate melt-in-your-mouth texture!
