2 cups cooked brown rice
1 cup black beans (drained and rinsed)
1 cup corn kernels (fresh, frozen, or canned)
1 cup diced tomatoes (canned or fresh)
1/2 cup onion, finely chopped
1/2 cup bell peppers, diced (any color)
1 cup shredded cheddar cheese (or Mexican blend cheese)
1/2 cup salsa (mild, medium, or spicy, based on your preference)
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 tablespoon olive oil
1/4 cup fresh cilantro, chopped (optional, for garnish)
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C)and lightly grease a baking dish with olive oil or cooking spray.
Step 2: Prepare the Rice Mixture
In a large mixing bowl, combine the cooked brown rice, black beans, corn, diced tomatoes, onions, and bell peppers.
Add the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.
