Instructions:

  1. Activate the Yeast:
    • In a bowl, combine warm milk, active dry yeast, and a pinch of sugar. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt.
    • In a separate bowl, whisk together the eggs and sugar.
    • Add the activated yeast mixture to the eggs and sugar, mixing well.
    • Gradually add the wet ingredients to the flour mixture, stirring continuously.
    • Once combined, add the softened butter and knead until the dough becomes smooth and elastic. You can use a stand mixer with a dough hook attachment for this.
  3. First Rise:
    • Place the dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place until it has doubled in size. This may take about 1-2 hours.
  4. Shape the Rolls:
    • Punch down the risen dough and divide it into equal portions to form rolls.
    • Shape each portion into a ball and place them on a baking sheet lined with parchment paper.
  5. Second Rise:
    • Cover the rolls with a kitchen towel or plastic wrap and let them rise for another 30-60 minutes, or until they are puffy.
  6. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  7. Egg Wash:
    • In a small bowl, whisk together the egg and milk for the egg wash.
    • Brush the tops of the rolls with the egg wash.
  8. Bake:
    • Bake the rolls in the preheated oven for about 15-20 minutes, or until they are golden brown and sound hollow when tapped.
  9. Cool:
    • Allow the milk brioche rolls to cool on a wire rack before serving.

These milk brioche rolls are perfect for breakfast, brunch, or as a sweet treat any time of the day. You can serve them with butter, jam, or enjoy them on their own. Enjoy your homemade brioche rolls!
