Preparation
Activate the yeast
Dissolve fresh brewer’s yeast and sugar in a portion of warm water. Let stand for 5 to 10 minutes until a light foam forms on the surface.
Prepare the dough
In a large bowl, sift the flour and add the salt.
Pour the activated yeast and the remaining water into the flour, mixing gradually.
Add the extra virgin olive oil and knead until the mixture is smooth and soft.
Let the dough rise
. Cover the dough with a clean cloth and let it rise in a warm place for about 2 hours, or until it doubles in size.
Shape the mini pizzas.
Divide the dough into 12 equal balls and roll them out slightly to create round bases.
Place the bases on a baking sheet lined with parchment paper.
Add the seasonings.
Customize your mini pizzas with tomato sauce, mozzarella cheese, and your favorite ingredients, such as olives, mushrooms, ham, or grilled vegetables.
Bake the mini pizzas.
Preheat the oven to 220°C and bake the mini pizzas for about 10 to 12 minutes, until golden brown and crispy.
Tips and variations
Wholemeal version: Replace half of the 00 flour with wholemeal flour for a more rustic version.
Sweet mini pizzas: Try filling the bases with chocolate spread or jam for a sweet alternative.
Freezing: Mini pizzas can be frozen after baking; simply warm them in the oven for 5 minutes before serving.
