Instructions:
1. Prepare Chicken for Marinating: Place the 4 boneless, skinless chicken breasts in a large resealable plastic bag or a container with a tight-fitting lid.
2. Whisk Marinade: In a small bowl or liquid measuring cup, whisk together all the marinade ingredients: olive oil, low sodium soy sauce, fresh lemon juice, whole grain mustard, Dijon mustard, liquid smoke, garlic powder, onion powder, black pepper, and salt. Whisk for 1-2 minutes until everything is thoroughly combined.
3. Marinate Chicken: Pour the whisked marinade over the chicken in the bag or container. Seal the bag or container, ensuring the chicken is well coated.
4. Chill: Place the chicken in the fridge to marinate for 2-3 hours. This allows the flavors to deeply penetrate the chicken.
5. Cook Chicken: When you’re ready to cook, remove the chicken from the marinade. Bake or grill the chicken at 400°F (200°C) until the internal temperature reaches 165°F (74°C) and the juices run clear. Cooking time will vary depending on the thickness of your chicken breasts and cooking method.
