Prepare the fruit β Peel and slice the bananas into thin rounds.
Combine ingredients β In a large saucepan, add bananas, pineapple with juice, sugar, coconut, and lemon juice. Stir to combine.
Cook the mixture β Place the pan over medium heat. Cook while stirring frequently until the mixture thickens and becomes glossy (about 15β20 minutes).
Optional flavor boost β Stir in cinnamon if desired.
Cool and store β Remove from heat and let the Monkey Butter cool slightly. Transfer to sterilized jars or airtight containers.
