Instructions:
1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5–10 minutes until foamy.
2. Stir in flour and salt. Mix and knead into a smooth dough (about 5–7 minutes). Cover and let rise for 1 hour.
3. Preheat oven to 450°F and line a baking sheet with parchment paper.
4. Divide dough into 8 portions. Roll each into a rope, flatten slightly, and place mozzarella in the center. Seal and shape into a pretzel.
5. Bring a large pot of water to a boil and add baking soda. Boil pretzels one at a time for 30 seconds.
6. Place on the baking sheet. Brush with beaten egg and sprinkle with coarse salt.
7. Bake 12–15 minutes or until deep golden brown. Serve warm.
