Stir in the minced garlic and cook for another 30 seconds.
Add the ground beef, breaking it apart as it browns. Season with salt, pepper, and smoked paprika. Cook until the beef is no longer pink.
Stir in the cooked bacon and BBQ sauce, mixing well. Let simmer for 2–3 minutes, then remove from heat.
Stir in the shredded cheddar cheese until melted and combined.
4. Stuff the Peppers:
Spoon the BBQ beef mixture evenly into each bell pepper.
5. Bake the Peppers:
Cover with foil and bake for 25–30 minutes, or until the peppers are tender.
6. Add the Final Touches:
Remove the foil, sprinkle the tops with shredded mozzarella cheese, and bake uncovered for another 5 minutes, or until the cheese is melted and bubbly.
7. Serve & Enjoy:
Garnish with fresh parsley or green onions, and serve hot with a side of coleslaw, roasted potatoes, or a crisp salad.
