Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
In a large bowl, combine the ground beef, almond flour, Parmesan cheese, chopped onion, minced garlic, egg, almond milk, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until well combined.
Divide the meat mixture into 12 equal portions.
Take one portion of the meat mixture and flatten it slightly in your hand. Place a cube of cheddar cheese in the center and wrap the meat around it, forming a ball. Place the ball into a muffin cup. Repeat with the remaining meat mixture and cheese cubes.
Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the tops are slightly browned.
Allow the meatloaf bites to cool for a few minutes before removing them from the muffin tin. Serve warm.
