Directions
1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with muffin cups.
2. In a large bowl, whisk together eggs, milk, granulated sugar, vanilla extract, and 1/2 tsp cinnamon. Add the cubed bread into the egg mixture and stir until the bread is fully coated. Let it soak for about 5 minutes.
3. Spoon the bread mixture evenly into the prepared muffin cups, pressing down slightly to compact.
4. In a small bowl, mix together melted butter, brown sugar, and an additional teaspoon of cinnamon. Drizzle this mixture over the top of each muffin cup.
5. Bake in the preheated oven for 20-25 minutes, or until the tops are crispy and golden brown.
6. Allow the muffins to cool for a few minutes before removing from the pan. Serve warm.

For those who like a bit of a twist, try adding some chopped nuts or raisins to the bread mixture for added texture. If you’re a fan of apple cinnamon flavors, tossing in some finely chopped apples will infuse a lovely fruity touch. For a lighter version, substitute almond milk for whole milk and use a sugar substitute in place of granulated and brown sugars.
