No Bake Peanut Butter Oat Cups

In a food processor, pulse rolled oats until finely ground to create oat flour. Measure out 1.5 cups once processed.
Gather the rest of your ingredients—peanut butter, maple syrup, and chocolate chips.
Step 2: Mix It Up
In a large mixing bowl, combine the peanut butter and oat flour. Stir until well mixed and crumbly.
Add the maple syrup and mix thoroughly until the dough comes together and holds its shape when pressed.
Step 3: Fold in Chocolate Chips
Gently fold in the chocolate chips, ensuring they’re evenly distributed throughout the mixture.
Step 4: Shape Into Cups
Line a muffin tin with paper liners or grease it lightly if making free-standing cups.
Press about 2 tablespoons of the mixture into each liner or form into small cups by hand on a plate lined with parchment paper.
Step 5: Chill Before Serving
Place the filled muffin tin or shaped cups in the refrigerator for at least 30 minutes to firm up.
Once set, remove from the muffin tin (if using) and store in an airtight container in the fridge for up to one week.
Step 6: Enjoy!
Serve chilled or at room temperature. Pair with milk, coffee, or tea for added enjoyment.
