Directions:
1. In a large mixing bowl, combine 1 cup of rolled oats and 1/2 cup of almond butter. Stir until the oats are evenly coated with the almond butter.
2. Add 1/4 cup of honey (or maple syrup) to the mixture and mix well until fully combined.
3. Incorporate 1/2 cup of crushed strawberries into the mixture, ensuring they are evenly distributed throughout.
4. Add 1/4 cup of softened cream cheese, 1/4 teaspoon of vanilla extract, and 1/4 teaspoon of salt into the bowl. Mix thoroughly until all ingredients are well combined and form a cohesive mixture.
5. If using, stir in 1/4 cup of shredded coconut and/or 1/4 cup of mini chocolate chips until evenly distributed.
6. Once the mixture is well combined, use your hands to form small bites, approximately 1 inch in diameter, rolling them into balls.
7. Place the formed energy bites onto a parchment-lined baking sheet or plate.
8. Once all the mixture has been rolled into bites, refrigerate for at least 30 minutes to help them firm up.
9. After chilling, the energy bites are ready to be enjoyed. Store any leftovers in an airtight container in the refrigerator for up to one week.
