How to Make the Best Fluffy Pancakes
Separate the egg yolk and egg white into two separate bowls. Add the egg yolk and sugar to a mixing bowl. Using a hand mixer or whisk, beat the mixture until it’s light and fluffy.
Add the milk and oil to the bowl with the yolk mixture. Gradually sift in the flour to ensure a smooth batter. Mix well to avoid any lumps.
In a separate bowl, whisk the egg whites until they form soft peaks. This step is crucial for creating the airy texture of the pancakes.
Gently fold the whipped egg whites into the batter. Add the baking powder and give it a gentle mix to combine all the ingredients. Let the batter rest for 5 minutes to activate the baking powder for optimal fluffiness.
Heat a non-stick pan over medium heat. Lightly grease the pan with a small amount of oil if needed. Pour a ladleful of batter onto the pan and cook until bubbles form on the surface, about 1–2 minutes. Flip and cook the other side until golden brown. Repeat with the remaining batter.
Stack your pancakes high, drizzle generously with maple syrup, and add any desired toppings. Serve warm for the ultimate pancake experience.
