Fresh strawberries (halved or sliced)

Instructions:
Make the base:
Crush the cookies into fine crumbs using a food processor or a zip-lock bag and rolling pin.
Mix with melted butter until evenly combined.
Press into the bottom of a springform pan (or pie dish) to form a firm base.
Chill in the fridge for 20–30 minutes to set.
Prepare the chocolate filling:
Heat the cream in a saucepan until just about to boil.
Pour over the chopped chocolate and let sit 1–2 minutes, then stir until smooth (this is your ganache).
Let it cool slightly, then mix in cream cheese, powdered sugar, and vanilla extract until smooth.
Assemble:
Pour the chocolate filling over the chilled crust.
Smooth the top and refrigerate for at least 4 hours (or overnight) to set fully.
Top and serve:
Before serving, top generously with fresh strawberries.
Add optional chocolate shavings or drizzle for extra flair.
