Directions
In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In a separate bowl, mix the milk, eggs, melted butter, and vanilla extract.
Combine the wet and dry ingredients, stirring until just combined. Fold in the diced peaches.
In another bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
Heat oil in a deep fryer or large pot to 350°F (175°C).
Spoon a tablespoon of the batter into the hot oil, then add a teaspoon of the cream cheese mixture, followed by another tablespoon of batter on top.
Fry the donuts until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Sprinkle the donuts with cinnamon while still warm. Serve immediately.
Variations & Tips
For a healthier twist, you can bake these donuts instead of frying them. Simply preheat your oven to 350°F (175°C) and bake in a donut pan for about 12-15 minutes. If you’re short on time, you can use store-bought biscuit dough as a base. Just flatten the dough, add the filling, and seal the edges before frying. For a different flavor profile, try using apples or berries in place of peaches. And if you’re feeling adventurous, add a splash of bourbon to the cream cheese filling for an extra kick.
