First, roast the nuts. Put the almonds in a pan and toast them for two minutes over medium heat.
After 2 more minutes, stir in the pumpkin seeds and walnuts.
Place the nuts on a dish and set aside to cool.
Get the Dates Ready: Give them a 15-minute soak in cool water.
After removing the dates’ pits, drain the water.
Toss the dates into a blender.
add All Ingredients: In a mixing bowl, add the dates and peanut butter. Blend until smooth.
Make sure the mixture stays chunky by adding the cooled nuts and blending again.
For the cranberries, soak them in cold water for 15 minutes before draining.
To the mixer, add the cranberries along with a touch of salt.
For texture, blend the ingredients while retaining some chunks.
To make the bars, spread the batter out on a parchment paper-lined baking sheet.
Even out the mixture by pressing and smoothing it with a spoon.
Place a second parchment paper layer on top.
Prepare for Cutting by Freezing for at least two to three hours.
Take it out of the freezer and slice it into pieces that suit your needs.
For storage, wrap each serving with cling film.
The energy bars can last for up to four weeks if stored in the fridge.
