In a large bowl, beat butter, granulated sugar, and brown sugar for 3–4 minutes until light and fluffy.
Add Eggs and Vanilla:
Beat in eggs one at a time, then stir in vanilla extract.
Combine Wet and Dry:
Add the soaked oats to the butter mixture and stir to combine.
Gradually fold in dry ingredients. Do not overmix.
Bake the Cake:
Pour batter into prepared pan and spread evenly.
Bake for 30–35 minutes or until a toothpick comes out clean.
Prepare the Topping:
While cake bakes, mix melted butter, brown sugar, milk, vanilla, coconut, and nuts (if using) in a bowl.
Top the Cake:
Remove cake from oven and set oven to broil.
Evenly spread the topping over the hot cake.
Broil for 2–3 minutes until topping is bubbly and golden—watch closely to avoid burning.
Cool and Serve:
Let cool in pan on a wire rack.
Serve warm or at room temperature.
