Ingredients:
1 zucchini of medium size, shredded
1 cup of oats (gluten-free if necessary)
1 big egg
1/2 cup of Greek yogurt (if desired, for extra creaminess)
1/4 cup of unsweetened applesauce or mashed banana (if desired, for a natural sweet taste).
1/2 teaspoon of cinnamon (if desired, for taste)
1/2 teaspoon of vanilla extract (if desired)
1/2 teaspoon of baking powder
A little bit of salt
Use cooking spray or a small amount of olive oil to grease.
Toppings you can choose from: Fresh fruits, nuts, seeds, or a little honey.
Instructions:
Get the zucchini ready.
