🧂 Ingredients
For the Crust:
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 6–8 tablespoons ice water
For the Filling:
- 6–7 medium apples (Granny Smith or Honeycrisp recommended), peeled, cored, and sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour (to thicken filling)
- 1 teaspoon vanilla extract (optional)
Optional Topping:
- 1 egg, beaten for egg wash
- 1 tablespoon sugar for sprinkling
👩🍳 Instructions
- Prepare the crust:
- In a large bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, until dough comes together. Divide into two disks, wrap in plastic, and refrigerate for at least 1 hour.
- Make the filling:
- In a large bowl, toss sliced apples with sugars, cinnamon, nutmeg, lemon juice, flour, and vanilla. Set aside to let the flavors meld.
- Assemble the pie:
- Preheat oven to 425°F (220°C). Roll out one dough disk to fit a 9-inch pie pan. Transfer dough to pan, trim edges.
- Add apple filling evenly. Roll out second dough disk and place on top. Trim and crimp edges to seal. Cut small slits in the top crust for steam to escape. Brush with egg wash and sprinkle with sugar if desired.
- Bake:
- Bake for 45–50 minutes, or until crust is golden and filling is bubbling. If edges brown too quickly, cover them with foil.
- Cool and serve:
- Allow pie to cool at least 1 hour before slicing to let the filling set. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
