Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Rice the cauliflower by grating it or pulsing it in a food processor until it resembles rice.
Microwave the riced cauliflower for about 5 minutes, then let it cool slightly.
Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
Scoop about a tablespoon of the mixture and form it into small rounds, placing them onto the prepared baking sheet.
Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
Remove from the oven and top each bite with a small spoonful of pizza sauce and a few mini pepperoni slices.
Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil if desired, and serve warm.
Variations & Tips
For a vegetarian version, skip the pepperoni and add your favorite veggies like bell peppers or mushrooms. You can also experiment with different cheeses, such as cheddar or gouda, for a unique flavor. If you’re short on time, use pre-riced cauliflower available at most grocery stores. For a spicier kick, add a pinch of red pepper flakes to the cauliflower mixture.
