Ingredients:
- ½ cup oats
- 2 apples, peeled, cored, and diced
- 1½ cups yogurt
- 2 eggs
- 1 teaspoon cinnamon
- 1½ teaspoons baking soda
Instructions:
- Prepare Ingredients:
- Peel, core, and dice the apples into small pieces.
- Pulverize the oats in a blender or food processor until finely ground.
- Mix Dry Ingredients:
- In a bowl, combine the ground oats, cinnamon, and baking soda.
- Mix Wet Ingredients:
- In a separate bowl, whisk together the eggs and yogurt until well combined.
- Combine Ingredients:
- Add the wet ingredients to the dry ingredients, mixing until fully incorporated.
- Gently fold in the diced apples.
- Cook Pancakes:
- Heat a nonstick pan or griddle over medium heat and coat with cooking spray or a little oil.
- Pour small amounts of batter onto the pan to form pancakes.
- Cook each pancake for 2-3 minutes on one side, until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Serve:
- Serve the pancakes hot, topped with honey, maple syrup, additional yogurt, or fresh fruit.
