Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil for easy cleanup.
2. Mix the Meatloaf Ingredients
In a large mixing bowl, combine ground beef, Parmesan, breadcrumbs, milk, chopped onion, minced garlic, parsley, oregano, basil, salt, pepper, and red pepper flakes (if using). Mix until just combined.
3. Add the Eggs
Crack in the eggs and gently mix until fully incorporated. Avoid overmixing to keep the texture tender.
4. Shape the Loaf
Transfer the meat mixture to the prepared baking sheet and shape into a loaf roughly 9×5 inches in size.
5. Prepare the Glaze
In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard. Spread the glaze evenly over the top of the meatloaf.
6. Bake
Bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C).
7. Rest and Serve
Remove from the oven and let rest for 10 minutes before slicing. Garnish with additional chopped parsley, if desired.
