Step 02
Spread marinara or pizza sauce over each tortilla. Divide cooked vegetables, pepperoni, and grated mozzarella cheese evenly among the tortillas. Top each filled tortilla with another to form a quesadilla.
Step 03
Using the same skillet, cook each quesadilla for 2-3 minutes on each side over medium heat until golden and crispy, and the cheese is melted. Repeat with remaining quesadillas.
