1️⃣ Cook the Pasta
Preheat oven to 375°F (190°C). Boil a large pot of salted water and cook the penne until just al dente. Drain and set aside.
2️⃣ Sauté the Aromatics
In a skillet, heat olive oil over medium heat. Add the onion and garlic; sauté for 3–5 minutes, or until soft and fragrant.
3️⃣ Brown the Sausage
Add the Italian sausage to the skillet. Cook until browned, breaking it into crumbles. Drain any excess fat and remove from heat.
4️⃣ Layer the Casserole
Lightly grease a 9×13-inch baking dish.

Spread a small amount of pizza sauce on the bottom.

Add half the pasta, followed by half the sausage, mozzarella, and pepperoni.

Repeat the layers, finishing with a generous topping of mozzarella and pepperoni.

5️⃣ Bake
Cover the dish with foil and bake for 25 minutes. Remove foil and continue baking for 10 minutes, or until the cheese is melted and bubbly, and the pepperoni edges are lightly crisped.
6️⃣ Finish and Serve
Remove from oven and sprinkle with Parmesan and oregano. Let cool briefly before serving.
