Carefully slice a pocket into each chicken breast, ensuring not to cut all the way through. The pocket should be large enough to stuff with the cheese and jalapeño mixture.
Generously stuff each chicken breast with the cheese and jalapeño mixture, pressing gently to seal the pocket.
Lightly coat the stuffed chicken breasts with a drizzle of oil to enhance browning and prevent sticking. Coat with taco seasoning.

Air fry the stuffed chicken breasts at 375°F (190°C) for about 18-20 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Since every air fryer cooks differently, check on this every 6 minutes or so.
Once cooked, carefully remove the stuffed chicken breasts from the air fryer and let them rest for a couple of minutes before serving.
