Prepare the Gelato Base: Heat milk and cream in a saucepan. Whisk egg yolks and sugar separately. Combine the two and cook until thickened. Stir in pistachio paste and vanilla extract.
Chill the Mixture: Chill the custard for at least 4 hours.
Churn the Gelato: Churn in an ice cream maker until thick.
Add Stracciatella: Drizzle melted chocolate into the gelato at the end of churning to create chocolate bits.
Freeze: Freeze for 2 hours before serving.
