Mix the Ingredients:
• In a spacious bowl, I combine the grated potatoes, chopped onion, eggs, flour, salt, pepper, and optional herbs. I ensure thorough mixing.
Heat the Oil:
• In a large skillet, I heat a thin layer of vegetable oil over medium-high heat.
Form and Fry the Pancakes:
• For each pancake, I spoon a heaping tablespoon of the potato mixture into the skillet. I flatten it with a spatula and fry until both sides are golden brown, approximately 3-4 minutes per side.
Drain:
• I transfer the pancakes to a plate lined with paper towels to drain any excess oil.
Serve:
• I serve the potato pancakes hot and, if desired, accompany them with sour cream or applesauce.
