Wash all produce thoroughly under cool water.
Chop apples, cucumbers, celery, and ginger into smaller pieces for easier blending.
Add all ingredients to a high-speed blender.
Blend until smooth. If the mixture is too thick, add a bit of water or coconut water to reach your desired consistency.
Taste and adjust: Add more lemon for tang, or a small green apple for extra sweetness if desired.
Serve immediately chilled, or over ice.
