1. Before you begin to prepare the Greek yogurt, ensure sure all of your tools are clean and free of germs.
2. In a saucepan, bring the milk to a temperature of around 85-90Β°C (185-195Β°F) over medium heat. For precise temperature readings, use a kitchen thermometer. This not only thickens the milk but also kills any germs that could be present.
3. Once the milk has reached a temperature of around 45Β°C (110Β°F), take it off the heat and let it to cool. Placing the pot in a cold water bath can hasten the chilling process.
