Blend the Batter
Place the cottage cheese, eggs, rolled oats, vanilla extract, baking powder, and salt in a blender or food processor. Blend until smooth, creating a thick, pourable batter.
Heat the Pan
Preheat a non-stick skillet or griddle over medium heat. Lightly coat it with cooking spray or a little oil to prevent sticking.
Cook the Pancakes
Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles appear on the surface and the edges begin to set. Flip and cook the other side for an additional 2-3 minutes, until golden brown.
Serve and Enjoy
Keep the pancakes warm while you finish the batch. Serve them hot with your favorite toppings—fresh fruit, yogurt, or a drizzle of maple syrup are all great choices!
