1. Prepare the puff pastry
Preheat the oven to 200°C.
Unroll the puff pastry on a baking tray lined with baking paper.
Prick the surface with a fork to prevent it from swelling and cook in a static oven for 12-15 minutes, or until golden.
Allow to cool completely before cutting into rectangles or squares of desired size.
2. Prepare the mascarpone cream
In a large bowl, mix the mascarpone with the icing sugar until you obtain a smooth cream.
Add the grated zest and lemon juice, stirring to combine well.
In another bowl, whip the fresh cream until stiff.
Gently fold the whipped cream into the mascarpone and lemon mixture using bottom-up movements.
3. Assemble the dessert
Spread the mascarpone cream on a rectangle of puff pastry.
Overlay another layer of puff pastry and repeat the operation to create more layers, as desired.
Dust with icing sugar before serving.
Tips for a perfect success
For an even more delicious variation, you can add a little lemon jam between each layer.
Store the dessert in the refrigerator until ready to serve to keep the cream fresh.
If you prefer an extra crispy puff pastry, brush the surface with a little milk before cooking.
