How to Make Pumpkin Bread from Downeast Maine
1. Heat the oven to 350 degrees Fahrenheit and grease two 9-inch bread pans.
2. In a big bowl, combine the pumpkin, eggs, oil, water, and sugar until well mixed.
3. In a different medium-sized bowl, mix the flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and cardamom together using a sifter.
4. Gently combine the powdered ingredients with the liquid ones until there are no more dry areas.
Pour half of the batter into each of the two loaf pans and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. I suggest covering the bread with foil for the last 15-20 minutes to avoid the tops from getting too brown.
5. Let the bread cool in the pan for around 15 minutes, then take it out and put it on a rack to cool. Let the bread warm up to room temperature before cutting it for better outcomes.
